For the Lasagna
  • 12 sheets Lasagna Noodles Cook until al dente
  • 2 tablespoons Olive Oil For sautéing and greasing
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
For the Filling
  • 8 ounces Mushrooms Sliced, any variety
  • 1 teaspoon Dried Thyme Or double fresh thyme
  • 10 ounces Spinach Fresh or frozen, well-drained
  • 15 ounces Ricotta Cheese Key ingredient
For the Cheesy Topping
  • 2 cups Mozzarella Cheese Shredded
  • 1/2 cup Parmesan Cheese Grated
For the Sauce
  • 3 cups Marinara Sauce Store-bought or homemade
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Cook lasagna noodles in salted water until al dente, about 8–10 minutes, then drain.
  3. In a skillet, heat olive oil and sauté onion until translucent, then add garlic and cook for another minute.
  4. Add mushrooms, thyme, salt, and pepper; cook for 5–7 minutes, then stir in spinach until wilted.
  5. Spread marinara sauce on the baking dish, layer with noodles, ricotta, mushroom mix, and cheeses.
  6. Repeat layers, finishing with sauce and cheese on top.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for 10-15 minutes until golden.
  8. Allow to cool for 10 minutes before slicing and serving.
