Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- Cook lasagna noodles in salted water until al dente, about 8–10 minutes, then drain.
- In a skillet, heat olive oil and sauté onion until translucent, then add garlic and cook for another minute.
- Add mushrooms, thyme, salt, and pepper; cook for 5–7 minutes, then stir in spinach until wilted.
- Spread marinara sauce on the baking dish, layer with noodles, ricotta, mushroom mix, and cheeses.
- Repeat layers, finishing with sauce and cheese on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake for 10-15 minutes until golden.
- Allow to cool for 10 minutes before slicing and serving.
