Step-by-Step Instructions
  1. Combine 1 pound of shrimp with baking soda and kosher salt in a medium bowl, toss well, and marinate for 15 to 20 minutes.
  2. In a large pot, bring water to a boil, adding a splash of fresh lemon juice. Add marinated shrimp and cook for 90 seconds until opaque.
  3. Transfer shrimp to a bowl of ice water to stop cooking, let cool, then drain and pat dry.
  4. In a large mixing bowl, combine celery, red onion, dill, mayonnaise, Old Bay seasoning, celery seed, Dijon mustard, and lemon juice. Mix until blended.
