Filling Preparation
  1. Whisk in chia seeds, your chosen sweetener, lemon juice, and a pinch of salt, mixing thoroughly.
  2. Fold in Greek yogurt or cream cheese for creaminess. Allow the mixture to sit for 5–10 minutes to thicken.
Assemble the Pie
  1. Spoon the blueberry chia mixture over the chilled crust, smoothing the top with a spatula for an even presentation.
Chill the Pie
  1. Cover the pie and place it in the refrigerator for a minimum of 2 hours, preferably overnight.
Garnish and Serve
  1. Remove the pie from the refrigerator and decorate the top with fresh blueberries, lemon zest, and mint leaves.
  2. Use a sharp knife warmed under hot water to slice the pie.
