Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering, about 1–2 minutes.
  2. Add 1 pound of diced boneless, skinless chicken breasts to the skillet. Season with salt, black pepper, and 1 teaspoon of smoked paprika.
  3. Once chicken is cooked, remove it from the skillet and set aside. Pour in 2 cups of water or chicken broth and scrape up any browned bits.
  4. Add 8 ounces of uncooked penne pasta to the simmering broth. Cover the skillet with a lid and simmer on medium heat for 10–12 minutes.
  5. Reduce heat to medium-low and stir in 1 cup of BBQ sauce, 2 tablespoons of honey, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of garlic powder.
  6. Return the seared chicken to the skillet, tossing it gently to coat in the BBQ sauce mixture. Let it simmer for an additional 2–3 minutes.
  7. Remove the skillet from heat and garnish your dish with chopped parsley or green onions before serving.
