Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Melt the butter and chocolate together in a heatproof bowl over simmering water until smooth.
  3. Whisk together the sugar and eggs until pale and thick, about 3-4 minutes, then fold in the chocolate mixture.
  4. Sift together the flour and cocoa powder, then fold into the wet ingredients until just combined.
  5. Gently fold in the chopped pistachios, reserving some for the coating.
  6. Transfer the batter into the lined baking pan and smooth the top.
  7. Bake for 20-25 minutes until edges are set, and a toothpick comes out with a few moist crumbs.
  8. Cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
  9. Spread pistachio cream over the top of the brownies once cooled.
  10. Cut the brownies into truffle-sized balls and roll in crushed pistachios.
