Method
 

Step-by-Step Instructions
  1. Combine ancho chili powder, light brown sugar, onion powder, garlic powder, cumin, and allspice in a small bowl.
  2. Season the chuck roast with salt, pepper, and 1 tablespoon of prepared chili seasoning.
  3. Sear seasoned roast pieces in vegetable oil for 4-5 minutes on each side.
  4. Sauté diced onion, bell pepper, and jalapeños in the same skillet for 5-7 minutes.
  5. Layer seared roast, sautéed vegetables, crushed tomatoes, diced tomatoes, tomato paste, chili beans, beef broth, Worcestershire sauce, and remaining chili seasoning in the Crock-Pot.
  6. Cook on HIGH for 6-7 hours or LOW for 10-12 hours.
  7. Taste and adjust seasoning with salt and pepper before serving.
