Step-By-Step Instructions
  1. Preheat your oven to 350°F (175°C). Season the pork loin generously with salt and pepper, and score the surface in a criss-cross pattern.
  2. In a medium bowl, whisk together Coca-Cola, brown sugar, soy sauce, Dijon mustard, and minced garlic until fully dissolved.
  3. Place the seasoned pork in a resealable bag, pour the marinade over it, seal, and refrigerate for at least 2 hours, preferably overnight.
  4. Remove the pork from the marinade and sear in a skillet over medium-high heat for 2-3 minutes per side until golden brown.
  5. Transfer the pork to a baking dish fat side up, pour the remaining marinade over it, and roast for about 1 hour or until the internal temperature reaches 145°F (63°C).
  6. Let the pork rest for 10 minutes before slicing and serving with remaining sauce.
