Ingredients
  

For the Shrimp
  • 1 pound Large Shrimp thawed
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Paprika smoked paprika optional
  • 1 teaspoon Garlic Powder or fresh garlic
  • to taste Salt
  • to taste Black Pepper
  • 1/4 teaspoon Cayenne Pepper omit for milder flavor
For the Corn Salsa
  • 1 cup Frozen Corn or fresh corn in season
  • 1/2 cup Red Onion diced
  • 1 medium Jalapeño optional
  • 1/4 cup Cilantro chopped
  • 1 tablespoon Lime Juice or lemon juice
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Sour Cream or additional mayo
  • 1 tablespoon Lemon Juice or lime juice
  • 1 clove Garlic freshly minced

Method
 

Prepare Shrimp
  1. In a mixing bowl, combine large, thawed shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne. Toss well to coat.
Make Corn Salsa
  1. In another bowl, mix corn, red onion, jalapeño, cilantro, lime juice, and salt. Combine gently and set aside.
Grill Shrimp
  1. Preheat the grill to medium heat. Grill shrimp for 2-3 minutes on each side until opaque.
Prepare Creamy Garlic Sauce
  1. In a bowl, whisk mayonnaise, sour cream, lemon juice, garlic, and seasoning until smooth.
Assemble Bowls
  1. Divide corn salsa into bowls, top with grilled shrimp, avocado, and drizzle with garlic sauce. Garnish if desired.
