- Preheat your oven to 350°F (175°C) and prepare your baking dish with butter or cooking spray.
- Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels.
- In the same skillet, sauté chopped onion until translucent, then add spinach until wilted.
- Combine bagel pieces, bacon, sautéed onions and spinach, diced tomatoes, and shredded cheese in a bowl.
- Whisk eggs and milk together, season with salt and pepper.
- Pour the egg mixture over the bagel mix and fold gently to coat all ingredients.
- Fold in cubed cream cheese evenly throughout the mixture.
- Transfer to greased baking dish and bake for 45-55 minutes until golden brown.
