Step-by-Step Instructions
  1. In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, salt, and pepper. Cook undisturbed for about 5 minutes.
  2. Pour in balsamic vinegar and sprinkle fresh thyme. Stir gently and cook for an additional 5 minutes until onions are jammy.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry and cut into 6 squares. Place on a parchment-lined baking sheet.
  4. Spread caramelized onions over each pastry square, leaving a ½ inch border around the edges.
  5. Crumble goat cheese over the onions on each tart. Bake in preheated oven for 15-20 minutes until golden.
  6. Cool slightly on the baking sheet for about 5 minutes before serving warm.
