Method
 

Step 1: Marinate the Chicken
  1. Combine chicken thighs with minced garlic and half of the oyster sauce. Season with salt and black pepper; marinate for at least 15 minutes.
Step 2: Prepare the Sauce
  1. In a medium saucepan, heat a splash of coconut milk, stir in the yellow curry paste and remaining oyster sauce. Cook for 2-3 minutes until fragrant.
  2. Gradually whisk in the rest of the coconut milk and water; bring to a gentle boil, then simmer for 10-15 minutes until slightly thickened.
Step 3: Cook the Chicken
  1. Heat olive oil in a frying pan over medium-high heat. Cook marinated chicken thighs for 6-7 minutes on each side until golden brown and fully cooked.
  2. Taste the curry sauce and adjust seasoning with lime juice, sugar, and salt.
Step 4: Serve the Dish
  1. Remove chicken and let it rest. Layer cooked rice in bowls, pour curry sauce on top, slice chicken, and arrange it over the sauce. Garnish with crispy onions and coriander leaves.
