For the Stir-Fry
  • 1 lb shrimp, peeled and deveined fresh or frozen
  • 1 lb asparagus cut into 2-inch pieces
  • 8 oz mushrooms sliced, any preferred variety
  • 3 tbsp soy sauce low-sodium recommended
  • 1 tbsp oyster sauce optional
  • 1 tbsp sesame oil toasted preferred
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp vegetable oil high smoke point
  • to taste salt
  • to taste black pepper
  • 2 cups cooked rice or noodles for serving

Method
 

Step-by-Step Instructions
  1. Prepare your shrimp by rinsing and drying them. Wash and cut the asparagus and slice the mushrooms.
  2. Marinate the shrimp in a bowl with 1 tablespoon of soy sauce and a pinch of salt for about 10 minutes.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering.
  4. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
  5. Add the marinated shrimp to the pan and cook for 2-3 minutes until they turn pink and opaque.
  6. Add the asparagus and mushrooms to the pan and cook for 3-5 minutes until the asparagus is tender-crisp.
  7. Pour in the remaining soy sauce and optional oyster sauce, stirring for another minute.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Drizzle sesame oil over the stir-fry and mix to combine.
  10. Serve immediately over cooked rice or noodles.
