  1. Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the all-purpose flour, chives, thyme, salt, and black pepper until well combined. Using a food processor, pulse the cold, cubed unsalted butter and Parmesan cheese until the mixture resembles coarse crumbs. Add in the flour mixture and pulse until incorporated. Gradually drizzle cold water while pulsing until the dough just comes together. Cover the dough in plastic wrap and refrigerate it for 1 hour.
  2. After chilling, lightly flour your work surface and roll out the dough to a thickness of 1/4 inch. Utilize a 2 1/2-inch round cutter to cut out cookies, placing them carefully onto a parchment-lined baking sheet. Bake the cookies in your preheated oven for 18-22 minutes or until they turn a lovely golden-brown. Once baked, allow them to cool on a wire rack while you prepare the savory filling for your Savory S’mores.
  3. Preheat your broiler to high. On a baking sheet, take half of the cooled cookies and layer each with a slice of savory prosciutto followed by a cube of creamy brie cheese. Broil these assembled cookies for 30 seconds to 1 minute, keeping a close eye until the brie softens and lightly chars at the edges.
