  • 1.5 cups Self-Raising Flour
  • 1 cup Grated Cheddar Cheese

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line a 9x9 inch baking dish with baking paper.
  2. Grate the zucchini and carrot, sprinkle with salt and let sit for 10 minutes to draw out moisture.
  3. Sauté the diced onion and chopped bacon in olive oil for 5-7 minutes until golden and crispy.
  4. Combine drained zucchini and carrot with the sautéed mixture, red capsicum, cheese, and flour.
  5. Add eggs, milk, olive oil, salt, and pepper; stir gently until just combined.
  6. Pour mixture into the baking dish, smooth the top, and sprinkle extra cheese if desired.
  7. Bake for 35-40 minutes until firm and golden on top.
  8. Cool for 5-10 minutes, then lift out and cut into portions.
