Step-by-Step Instructions
  1. Cook the Noodles: Boil a large pot of water. Add rice noodles or linguine according to package instructions until al dente, about 4-6 minutes. Reserve ½ cup of noodle water before draining.
  2. Sauté the Aromatics: In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  3. Create the Sauce: Whisk in gochujang, soy sauce, rice vinegar, and maple syrup. Cook for another 1-2 minutes until the sauce slightly thickens.
  4. Combine Noodles and Sauce: Add drained noodles and reserved noodle water to the skillet. Toss until noodles are well coated and heated through, about 2 minutes.
  5. Simmer and Thicken: Let the mixture simmer for 2-3 minutes, watching for a glossy appearance indicating it's ready.
  6. Serve and Garnish: Transfer noodles to serving bowls. Garnish with scallions and sesame seeds. Add sautéed veggies if using.
