Preparation
  1. Preheat your oven to 400°F (200°C). Lightly coat a baking sheet with olive oil and season the salmon fillets with salt and black pepper.
  2. In a medium saucepan, combine pomegranate juice, orange juice, honey, orange zest, Dijon mustard, and minced garlic. Simmer for 5-7 minutes until the glaze thickens.
  3. Place the seasoned salmon on the baking sheet and generously apply the glaze over each fillet.
  4. Bake for 15-20 minutes until the salmon flakes easily. Optionally broil for an additional 2-3 minutes for caramelization.
  5. Garnish with pomegranate seeds, orange slices, and fresh parsley or mint before serving.
