Step-by-Step Instructions
  1. Drain chicken liver and place in a bowl. Pour in Shaoxing wine and sprinkle with salt. Marinate for 15-20 minutes.
  2. In a separate bowl, mix chicken broth, another splash of Shaoxing wine, light soy sauce, dark soy sauce, sugar, cornstarch, and Sichuan peppercorns. Whisk until smooth.
  3. Heat a large skillet over medium-high heat. Add peanut oil and cook marinated chicken liver until golden on the bottom, then flip and cook until just done.
  4. Add more peanut oil if necessary, then stir-fry minced garlic and grated ginger for 30 seconds until fragrant. Add sliced onions and sauté until softened.
  5. Return cooked chicken liver to skillet, along with chopped bell peppers and prepared sauce. Stir quickly and cook for an additional 2-3 minutes until sauce thickens.
