  1. Season the chicken thighs generously with salt and pepper on both sides. Set aside.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for about 5 minutes until golden brown. Flip and sear the other side for 3-4 minutes. Remove from skillet.
