- Heat a non-stick skillet over medium heat and melt the butter.
- Lay one slice of bread in the skillet, coat with melted butter, and spread spinach pesto on top.
- Tear the burrata into smaller pieces and sprinkle evenly on the pesto.
- Place the second slice of bread on top and cook until the bottom is golden brown, about 3-4 minutes.
- Flip the sandwich and cook for another 3-4 minutes until both sides are golden and the cheese is melted.
- Remove from the pan, cool for a minute, then slice in half to serve.
