  • 2 units Mini Cucumbers Thinly sliced.
  • 1 cup Frozen Corn Thaw before use.
  • 1/4 cup Cilantro Optional.
  • 2 tablespoons Minced Red Onion Substitute with chives for milder taste.

Method
 

Preparation Steps
  1. In a medium-sized bowl, whisk together sour cream, mayonnaise, cotija cheese, lime zest, lime juice, elote seasoning, and garlic until smooth and creamy.
  2. Slice mini cucumbers thinly (about 1/4 inch thick) and arrange in a large mixing bowl.
  3. Thaw frozen corn in a microwave-safe bowl for 2-3 minutes or run warm water over it in a colander until thawed, then add to the bowl with cucumbers.
  4. Chop cilantro and mince red onion, then add to the cucumber and corn mixture.
  5. Pour the prepared dressing over the cucumber, corn, cilantro, and onion mixture. Gently fold to combine.
  6. Sprinkle sea salt to taste and let the salad chill in the refrigerator for 10-15 minutes before serving.
