- In a medium-sized bowl, whisk together sour cream, mayonnaise, cotija cheese, lime zest, lime juice, elote seasoning, and garlic until smooth and creamy.
- Slice mini cucumbers thinly (about 1/4 inch thick) and arrange in a large mixing bowl.
- Thaw frozen corn in a microwave-safe bowl for 2-3 minutes or run warm water over it in a colander until thawed, then add to the bowl with cucumbers.
- Chop cilantro and mince red onion, then add to the cucumber and corn mixture.
- Pour the prepared dressing over the cucumber, corn, cilantro, and onion mixture. Gently fold to combine.
- Sprinkle sea salt to taste and let the salad chill in the refrigerator for 10-15 minutes before serving.
